I've experimented with a variety of different sauces and I recommend anyone trying falafel to do the same. Here are some that I like:

- spinach dip
- plumb sauce
- hummus
- salad dressings
- sweet and sour
- chutney

I often mix a couple together as well. More important than the sauce is making sure you get lots of the cruciferous vegetables in them (spinach, cabbage, etc).

Thanks Sabinna. Are chick peas readily available in Taiwan? They grow it where I live so it's quite easy to get and sure is one of my favorite sources of protein.

Great before a ride and good to think about while you're out there...just the thing to get you home--those last few kms can be tough..although 7-11 coffees on-route where available are ok motivators too. Great shots of great food.
