Loving the BITE: A Double Shot of Sunflower Seed Recipes

Bonus Recipe:  Sunflower Seed Butter

Place shelled sunflower seeds in food processor.  Process on high 30-60 seconds until they form a paste.  Add oil (olive, peanut, etc), if too dry or crumbly.  Process to desired consistency.

Need a healthy snack idea?  You don’t need to buy the latest, greatest, energy bar.  Just grab a handful of shelled sunflower seeds.  Eaten a couple of hours before a ride, the long-lasting energy will serve you well.

    I never realized that sunflower seeds had so much fiber.  I like to get additional fiber in my diet so now I know I can rely on the seeds to do this.  I’m off to go whip up some sunflower seed butter.

    Thanks for your comments!  No worries, if you don’t like tofu, this sauce/marinade would be great on chicken and turkey breasts, too!  No matter the protein source, you’ll still get the benefits of the sunflower seeds!

    I agree with some of the other comments, I don’t like tofu.  What other foods would this marinade be good with?

    I’ll try out the marinade and butter, but am going to pass on the tofu.  I don’t enjoy tofu, but I sure do like sunflower seeds.  Thanks for providing all the benefits along with this recipe.

    My kids like to eat sunflower seeds so I will try this out and see what they think.  That sunflower butter is so easy and I can’t believe I never thought of making it before.

      That’s what I thought after I began making sunflower seed butter – why didn’t I think of this before.  It can add variety if your kids like nut/seed butters, and it’s often less expensive than nuts.  Enjoy!  Kelli, RD

      I feel the same way, Samantha.  When I saw this week’s Loving the BITE I couldn’t believe that I hadn’t thought of making my own sunflower seed butter.  I bought it once a while back and really liked it….plus I have a Vitamix blender that will mix it up very nicely.
